Apple Short Cake
6 apples
1 cup sugar
2 cups sifted flour
1 teaspoon cream tartar
1/2 teaspoon baking powder
pinch salt
1/2 cup butter
1 egg
Peel and slice the apples, put them on to stew with very little water and 1/2 cup sugar, when cooked put aside to cool. Take sifted flour, cream of tartar, baking powder and pinch of salt with rest of sugar, sift well together then rub in butter; when niceand crumbly add a well beaten egg, and enough water to make a nice biscuit paste (not too stiff). Divide into two and line a well-greased sandwich tin with one half spread with cooked apple and cover with other pastry. Pinch the edges together and bake in fairly hot oven for 1/2 hr. Serve with cream or custard.
